I started Cardoon because I care deeply about authenticity.

I wanted to cook authentic dishes from around the world: real Sardinian minestrone, real machaca burritos from Northern Mexico, real Murcian-style paella huertana. But when I searched online, I kept running into the same issues. Most of the international recipes I found were written by people with no cultural ties to the dishes and heavily Americanized recipes. Recipe photos shot in the US that looked nothing like what you'd actually be served in Italy, Mexico or Spain. And, of course, long recipe pages with too much text and way too many ads.

What I really wanted was a single (ad-free) place where I could discover truly local recipes – recipes written by chefs in their home countries. I also wanted to see a photo of the authentic dish cooked locally.

That's what Cardoon is. We work with local chefs around the world to develop recipes that are as authentic as possible. Every dish is cooked and photographed locally. With Cardoon, you can explore the world without leaving your kitchen.
